It's snowing again. Or is it still snowing from yesterday? In any case, I don't think I'll be going out at all today. I had kinda wanted to go to Starbucks to buy gift cards for my co-workers, but that's not happening today.

While I was going to be out, I wanted to stop at the store and get some pecans. I found a cookie recipe I really want to try, but I only have almond slivers, no pecans. I may try it with the almonds since the nuts are more of a garnish. What do you think?


Frosted Pecan Butter Cookies

Ingredients:
1 cup butter, softened
3/4 cup confectioners' sugar
2 tablespoons milk
1 1/2 cups all-purpose flour
3/4 cup cornstarch
1/2 cup chopped pecans

Lemon Frosting:
2 1/2 cups confectioners' sugar
3 tablespoons lemon juice
1 tablespoon butter, melted
2 drops yellow food coloring (optional)

Directions:
In a large mixing bowl, cream butter and confectioners' sugar; beat in milk. Combine flour and cornstarch; gradually add to creamed mixture. Cover and refrigerate for 1 hour or until easy to handle.

Roll dough into 1-inch balls. Dip each ball halfway into pecans. Place nut side down 2 inches apart on ungreased baking sheets. Flatten slightly. Bake at 350 degrees F for 13-15 minutes or until lightly browned. Remove to wire racks to cool. In a small bowl, combine frosting ingredients until smooth. Frost cooled cookies.


ETA: I just realized that I don't have enough butter for this recipe, so it's going to have to wait until I can get to the store. Oh well.

ETA 2: On second look, I think I do have enough butter. I forgot that 1C = 2 sticks of butter. I had it in my head it was 4 sticks. In which case, I'm only 1 TBSP short of a cup. But, I have more butter, technically it's all margarine, in a tub that I can make the difference up with. I'm gonna try it.
